Recipe: Monday Night Football Taco Dip

What's better than Monday Night Football? Easy. Monday Night Football with a delicious taco dip! This recipe has specifically been constructed around items that you can find quickly at your local grocery store and hurry home to prepare it and get in front of the TV with time to spare. Enjoy!

 

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 jalapenos, finely chopped (optional)
  • 1 (1.25 ounce) package taco seasoning mix
  • 2 (16 ounce) cans refried beans (spicy)
  • 1 (8 ounce) container sour cream
  • 2 cups shredded Cheddar cheese
  • 1 (15 ounce) jar salsa
  • 2 (12 ounce) bags tortilla chips

Directions

  1. Preheat oven to 350 degrees. Lightly grease a 9x13 inch pan, and set aside.
  2. Put a large skillet over medium-high heat and drop in ground beef and onions. Cook and stir until the beef is crumbly and evenly browned - mix in the jalapenos in the last few minutes of cooking. Drain fat. Mix in taco seasoning, and set aside.
  3. Spread refried beans to cover the bottom of the prepared 9x13 inch pan. Spread sour cream on top of the beans as evenly as possible. Layer the cooked ground beef and onions evenly over the sour cream. Pour the jar of salsa over the ground beef and spread 2 cups shredded Cheddar cheese over the salsa layer.
  4. Bake in the preheated oven until the cheese is bubbly and the layers are heated through. Serve with tortilla chips and your choice of fresh toppings (lettuce, tomato, olives, etc).

Recipe: A Man's Breakfast Sandwich

Breakfast is the most important meal of the day!!!  I couldn't decide what I wanted this morning.  I planned on just having bacon and eggs, but then the soon-to-be Mrs. asked if I would make her waffles. 

 

Sounded good too! 

 

Sooooo.. I decided that I would have a little of everything.  As I finished cooking, I quickly ran out of room on my plate.  Ah-ha! 

 

First came the waffles, then two over-easy eggs, meanwhile the bacon was still sizzling on the griddle.  Then I decided that a little shredded cheese makes everything better.  Finally the bacon was ready, I taste tested 5 strips just to make sure, then piled them over the cheese covered eggs. 

 

One final step, which I did with one out of two, on the open waffle lightly drizzle maple syrup, hmmm.  The sandwich was born and I was proud parent.

Recipe: "Prairie Fire" Spicy Dip for Football Games

I am going to share a great football recipe I got from my Step-dad.  Living in Chicago I am no stranger to cold winters, and a cold football season.  Prairie Fire, the appropriate name my Step-dad gave to this easy cheese/chili dip has always been a staple during those cold weather games.  Almost everything is adjustable in this recipe, so you can make it hot for those early mornings tailgating with the guys, or make it mild for a Sunday night game in with the family.  Enjoy!

My recipe is HOT!  Best served with a sturdy chip.

 

2 bricks of Velveeta Cheese

1 32 oz can of chili, no beans

1 medium yellow onion, diced

4 jalapeno peppers, diced

6 serrano peppers, diced

5 tbsp Chili powder

2 tbsp cayenne pepper

2 tbsp paprika

4 tbsp crushed red peppers

5 tbsp tabasco (or your favorite hot sauce)

 

Note: Best when made in slow cookers/crock pot.  Can cook in oven too.

 

Preheat Oven to 400 degrees

 

Cut Velveeta into small cubes (about half inch in size) and add to slow-cooker

 

NOTE:  If cooking in the over, melt cheese using microwave then pour into oven safe container for cooking

Once cheese is melted, add all the ingredients and stir well.  

 

Bake in over for 45-60 minutes, the longer the better the flavors blend.  (same goes for slow cooker)

 

Serve in some kind of heated container (slow-cooker, crock pot, porcelain bowl with heat source underneath it)

Serve with a strong chip.  ( I use Tostitos crispy rounds)

This Candied Bacon Recipe is Badass

Candied bacon can be a bit time intensive and tedious, but it's definitely worth it and destined to become something your friends and family keep asking you to make. (The whole recipe is listed at the bottom.) First of all, you want to start off with some thick-ass bacon. I usually use smaller slices (about 1oz each), but for these pictures, I had some extra thick stuff, these slices were about 1.7 oz each. This definitely made an excellent end product, but regular butcher's cut thick bacon is sufficient as well.

Get a baking sheet, parchment paper and an oven-safe baking rack. Don't be an idiot, spray some Pam on that rack first. Prep the bacon by throwing it in an oven preheated to 350 degrees. Leave it in for 10 minutes, then flip and cook for 5 more minutes. While this is going on, prepare the glaze. You'll need rice vinegar, maple syrup, dark brown sugar and black pepper.

Measurements: 1/4 cup brown sugar, 2 tbsp rice vinegar, 4 tbsp syrup, black pepper to taste. It's hard to get the black pepper to stick on the bacon, so if you like black pepper, use a whole lot of it in the glaze. I like to use a lot of black pepper, it gives a good contrast to the sweetness. Once you've got the bacon prepped (cooked for about 15 minutes), brush both sides with the glaze, and put it back in the oven for 6 minutes.

You'll need to flip the bacon every six minutes and spread more glaze on the top side of the bacon. You want to repeat this every 6 minutes until you're out of glaze. It will start to shrivel up and the bottom of the pan will fill with sugar and grease, so make sure to use parchment paper - otherwise you'll never get the pan cleaned.

Once you're out of glaze, leave the bacon in the oven until it's finished. This will take 15-20 minutes. Keep an eye out, because it will burn quickly when finished, but you need to make sure it gets crispy first. Resist the temptation to turn the oven up, as the sugar will burn at temps above 350 degrees.

When it's done, the bacon will be a dark leathery color (though quite shiny). The sugar on the pan is burnt, but the bacon only has a tiny bit of burning on the ends. Trust me, these burnt ends are fucking delicious. Move it away from the heat and let it cool down. Make sure to pull it loose from the grate once everything starts to set. If you wait too long, it will stick very badly and you will have torn up pieces of bacon instead of nice sexy strips.

Have fun making this, you're probably going to find yourself doing it more than once. Here's the whole recipe laid out:

 

8-10 oz of bacon (regular thick bacon is about 1oz per slice, the bacon in the pictures was 1.7oz each before cooking)

1/4 cup - dark brown sugar

2 tbsp - rice vinegar

4 tbsp - maple syrup (use the real stuff!)

black pepper to taste (as in, if you have taste, you'll use lots of it)

 

Preheat oven to 350. Prep the bacon for glazing - cook it for about 15 minutes, then pull it out and glaze both sides of it. Cook the bacon for 6 minutes, flip it and glaze the top. Repeat until the glaze is gone, then cook for 15-20 minutes to crisp up the bacon. Let it cool completely before devouring entirely.
